Walnut Crusted Quiche

Walnut crusted Quiche with Red Onion and Mushroom


This one is one of my all time favourites! I've used red onions and mushrooms as the filling but you could use whatever fillings you like! A great breakfast option that will keep you going into the afternoon, powered by healthy fats and a good dose of protein. YUM!



Ingredients: Base: 2 cups walnuts 4 Tbs Butter


Filling: 250ml coconut cream 2 tbs dijon mustard 4 eggs 2 large red onions, sliced and sautéed until soft 1 cup sliced mushrooms 2 tbs fresh thyme, chopped Salt and pepper to taste

Method:

  1. Preheat the oven to 180

  2. Prepare the base of the quiche by blending together the walnuts and butter until a sandy texture is reached.

  3. Press the mixture into a pie tin, about half cm thickness

  4. Bake in the oven for 15-20 minutes until you smell the nuts are toasting. It will be soft to touch, Allow to completely cool.

  5. Meanwhile, put together the mixture for the filling. In a saucepan, sauté your sliced red onion until soft and add in the thyme, slice the mushrooms.

  6. In a small bowl, whisk together the eggs, coconut cream, mustard, salt and pepper.

  7. Once the base is cool, assemble the quiche by lining the base of the tart with onions, pour in the egg mix, and then top with the sliced mushrooms.

  8. Bake for 20-30 minutes, depending on your oven, until the quiche is firm and set.


Enjoy with a side salad or on its own :)
