Sometimes you just want a delicious, gluten free granola that isn't expensive. This does just the trick!
Dry Ingredients:
2 cups coconut chips
1 cup pecans
1/2 cup hemp seeds
1/2 cup sunflower seeds
1/4 cup almonds, chopped
1/4 cup pepitas
1/4 cup cacao nibs
1/4 cup buckwheat kernels
1 tsp salt
1 tbsp cinnamon
Wet Ingredients:
1/3 cup coconut oil, melted
1/3 cup nut butter
1/2 cup maple syrup
Method:
Preheat your oven to 180°C and prepare a baking tray by popping it on the bench.
In a large bowl, add all the dry ingredients and stir to combine.
In a small bowl, add the wet ingredients and mix well to form a syrupy paste.
Pour the paste into the dry ingredients and mix thoroughly. You want the paste to coat and 'collect' the dry ingredients.
Place the granola mix onto the baking tray, and then into the oven.
Bake for 30 minutes, every 10 minutes check on it and stir the mix around. This ensures it cooks evenly and doesn't burn.
Serve with coconut yoghurt, dairy free milk of choice and some seasonal fruit. As it's winter I'm option for stewed apples and pears!
