Choc Nutty Bites


Here's a crunchy, chewy, delicious bite for those cold rainy days to keep you company with a cup of tea, a good book and a blanket.



Ingredients:


Dry:

1 1/2 cups almond meal

1/4 cup walnuts

1/4 cup flaked coconut

2 tbs cacao nibs

1 tsp maca powder

1/4 cup coconut sugar

1/2 tsp baking powder

1/4 salt

2 tbs cacao powder (optional, use for a double choc version)


Wet:

1 egg

1/4 cup coconut oil


Method:

Preheat oven to 180° and line a tray with baking paper

Combine dry ingredients, and add in wet ingredients. Mix well

Roll into biscuit sized balls and flatten

Bake for 10-15 minutes until firm and gooey


Eating:

Enjoy with a cup of tea and your favourite book. At the moment I'm loving 'The Immortalists' by Chloe Benjamin and 'A Lifetime of Impossible Days' by Tabitha Bird
